As promised, here is the Green Minestrone recipe. I found this beautiful recipe from The Beauty Chef by Carla Oates. Her cookbooks are so beautiful. I leave The Beauty Chef out on the counter or coffee table to feel inspired to not only cook, but eat really healthy. It feels like a loving treat to myself. I have omitted the green peas. I can’t get them down and I have tried to no avail. I just don’t like them. Once, I tried to show the girls I try everything on my plate. That lesson backfired. I gagged and had to spit them out. I just can’t do green peas. If you love them, add away to your hearts content.

Ingredients

a glug of olive oil

1 leek, cleaned and sliced

2 celery sticks, sliced

3 garlic cloves, minced

1 head broccoli, in bite sized florets

1 zucchini, diced

6 cups veg broth

half pound green beans cut into bite sized

one bunch of kale. chopped

1 bunch parsley, chopped

1 bunch mint, chopped

1 bunch basil, chopped

zest of lemon

salt and pepper to taste

Directions

Begin by heating your oil on medium heat. Add leek and celery until soft. About 5 min. Watch heat as to not burn. Add broccoli, zucchini, and garlic. Stir to combine.

Add broth and bring to a boil. Simmer for 10 min then add beans simmering for another 5 min. Lastly add kale, herbs and lemon zest. Season with salt and pepper.
