It’s SUMMER! And the peaches are here! My favorite spot to grab fresh peaches is the Freedom Farmer’s Market. Watsonia Farms has gorgeous organic peaches they bring in every Saturday when the peaches are in harvest. Because our peaches are organic, no need to peel them. Unpeeled is great on time and taste!

We like to make cobbler for any occasion. Big or small group does not matter. This is a crowd pleaser, screams southern summertime, and super simple to put together. A little tip- bake it early morning before it gets too hot. Then, if you’re having a dinner party, you can spend time doing something else, and have a cool house inside.

Ingredients

4 pounds ripe organic peaches

2 tablespoons amaretto

2 cups all-purpose flour

2 cups sugar

3 eggs room temperature

1 stick (4 ounces) unsalted butter, melted

Directions

Preheat oven to 375 F. Mix sliced peaches and amaretto and pour into a 9×13 inch baking dish. In a large bowl, mix flour, sugar and salt together. Add in beaten eggs. The dough should be very sticky. Spread over top of peaches evenly. If dough is too heavy in the center it may take longer to bake. Pour melted butter all over top of dough. Bake for 45 minutes or until dough is cooked through and lightly brown. Serve warm or room temperature with a dollop of vanilla ice cream. Serves 12
