Vegetable Enchiladas with Tomatillo Sauce

Tomatillos look like green, unripe tomatoes wrapped in a papery husk.  Their name translates to “little tomato”, yet they aren’t actually tomatoes at all.  They are slightly more acidic and slightly less sweet than their nightshade cousins.  With our enchiladas, the bright and vegetal flavors of tomatillos are showcased in this simple and amazing enchilada sauce ladled over corn tortillas stuffed with bell peppers, zucchini, mushrooms, corn, and black beans. The whole thing is topped with Monterey Jack and chopped cilantro.
