Pressed Pesto Picnic Sandwiches
Our basil plants are loving these hot wet days so we are whipping up a batch of house made pesto (made with out pine nuts) for these crunchy pressed sandwiches. Ciabatta smeared with fresh pesto and layered with provolone, Proscuitto, sweet Capicola, roasted red pepper, EVO, and fresh mozzarella then pressed to meld all the flavors.
