Chipotle Turkey Sweet Potato skins

If there is one thing big chain, casual dining restaurants of the 90’s did right, it was introducing crispy, cheesy potato skins to the menu.  Our’s is a much healthier version than its TGIFriday’s cousin. Our entree is grain free and features a lean protein, leafy green, and a vegetable. We stuff sweet potato skins with chipotle ground lean turkey and spinach, then top with sharp cheddar cheese and bake until crispy. Served with cilantro, plain greek yogurt, and a lime wedge.  Gluten Free
