The Italian Panzanella is the best summertime salad. I absolutely love to make it and then eat it. And even better, my girls will eat it too. Cut colorful bell peppers, tomatoes, cucumber, onion, fresh basil right from my garden, and homemade croutons are thrown in a large bowl. I also add kalmata olives and/or capers and feta if I have it on hand. After you toss the salad all together you add a dijon vinaigrette. The vinaigrette is good olive oil, dijon mustard, garlic, champagne vinegar, kosher salt and pepper. So simple and so fresh.
As I write this morning I am recovering from Cinco de Mayo and catering for a birthday party. I may have had one too many margaritas, sangrias, and I am sure some other form of alcohol. This healthy dish is just what I need to rejuvenate my body for the upcoming week. The yummy fresh croutons soak up any left over alcohol, too. Fresh salad, a quiet Sunday, and a little pool time with the girls sounds like the perfect day. Which reminds me, this salad is very good for packing for a picnic! I love summertime.
